AREA AND SOIL:<\/strong><\/p>

Vineyards in the locality of Cavreghe di <\/span>Torbe (Negrar) with clay soil, <\/span>Casale locality in Marcellise with <\/span>soil of calcareous origin, and <\/span>Monte Dei Santi locality (VR) <\/span>with red flake soil <\/span>of sedimentary origin.<\/span>Located between 230 and 450 meters above sea level, <\/span>with southwest exposures.<\/span><\/p>

WINE TRAINING AND HARVESTING:<\/strong><\/p>

Veronese pergola, plantings of 1950, 1970 and 1995. <\/span>Cluster thinning <\/span>in August and <\/span>harvest between the middle and <\/span>the end of September, <\/span>with manual harvesting and careful selection <\/span>harvest in the vineyard. <\/span>Yield 30 q.li\/ha<\/span><\/p>

VINIFICATION AND AGING:<\/strong><\/p>

Withering for 100\/120 days, <\/span>fermentation with pied de cuve <\/span>in steel tanks without <\/span>temperature control. <\/span>Aging 60 months in tonneaux <\/span>of 5 hl oak and <\/span>24\/30 months in bottle. <\/span>Sulfur dioxide less than 30 mg\/liter<\/span><\/p>
