Veronese pergola, 1980 and 2015 plantings. <\/span>Cluster thinning <\/span>in August and <\/span>harvest in mid to late September, <\/span>with manual harvesting. <\/span>Yield 80 q.li\/ha<\/span><\/p>

VINIFICATION AND AGING:<\/strong><\/p>

Spontaneous fermentation in concrete tanks.
Aging 18 months in concrete and 12 months in bottle. Sulfur dioxide less than 30 mg\/lt<\/p>

Ideal with rich first courses such as pasta with meat sauce or composite risotto, or roasted-grilled meat main courses, cured
